Mole Poblano Recipe

-1 whole chicken cut into pieces
-225 grams of mulatto chili
-200 grams of wide chili
-115 grams of pasilla chili
-85 grams of sesame
-85 grams of peanut
-1 piece of hard bolillo
-200 grams of butter
-1 chocolate bar
-2 chipotle peppers
-500 grams of tomato
-250 grams of onion
-6 cloves of garlic

Ingredients

-1 hard corn tortilla
-1 teaspoon of anise
-5 pieces of cloves
-8 pieces of allspice
-1 stick of cinnamon
-4 liters of chicken broth
-1 pinch of salt to taste
-85 grams of almonds
-1 handful of raisins

Elaboration

1- You must wash the chicken, remove the skin, and boil it with water until it is completely covered. You put a piece of onion, two cloves of garlic, and salt to taste so that the meat acquires a touch of flavor. Besides, you wash the chiles, and you let them drain.
2- You take the tail off the chiles, and they are deveined to continue with the chocolate mole preparation.
3- You put a pan on the stove over medium heat. You put a tablespoon of butter and fry the chiles lightly. Once fried, leave them to soak with a little of the broth left over from cooking the chicken.
4- In another pan, you must toast the sesame seeds and fry the almonds, peanuts, and raisins with butter to continue with the mole sauce.
5- You add the pepper, cinnamon, anise, and cloves. It would help if you roasted the tomato cut into quarters, the onion, and the garlic.

6- You must grind the chiles and add the fried and roasted ingredients to prepare the Mexican mole. You strain the sauce and residue; you return them to the blender to continue grinding them.
7- You add the bread and the corn tortilla. To make grinding more accessible, you add chicken broth.
8- Once everything is ground, put it on the stove over medium heat. It is essential to keep moving the mole poblano sauce to prevent it from sticking to the bottom of the pot. You continue cooking for 40 minutes. You will notice that the mole changes color and darkens during this time.
