15 fresh tomatillos, peeled and cleaned.

1 small onion, quartered

2 or 3 serrano peppers.

1 large serving of fresh cilantro, stems removed, plus 1/4 cup of fresh cilantro leaves

3 garlic cloves.

1 tablespoon of freshly squeezed lemon concentrate.

1 tablespoon of cider vinegar.

1/2 teaspoon table salt, plus extra for seasoning

What is the best way to cook with tomatillos?

1.- Preheat the grill to high heat.

2.- Line a baking sheet with aluminum foil and cover with the tomatillos and onion wedges. Transfer to the oven and now you can roast for about 10 minutes, until the tomatillos and onion are slightly blistered, turning halfway through.

3.- Meanwhile, fill a small pot with water and add the serrano’s. Please bring them to a boil over medium heat and cook for 10 to 12 minutes until the pepper turns grayish-green. Drain, remove stems, and store.

4.- Transfer the tomatillos, the onion, and the 2 serranos to a blender. Add the coriander, garlic, lemon juice, vinegar, and salt, and pulse to mix. Add salt, if needed. If desired, add serrano pepper to achieve the desired level of heat. Press again to integrate them.

5.- Pour the sauce into a hermetically sealed pot and place it in the refrigerator to chill until serving time.
