We can assure you that the green sauce we learned from my mother has an incredible flavor, incomparable to any other we have tried, and most importantly, in addition to being delicious, it is cheap, pleasant for all ages, and preferences acceptable for gluten-free diets and vegans.

This homemade green tomato sauce is what my mother makes us every year because we have a garden and in it a large number of tomatoes, last year we worked together, and here we show you our recipe so that you can enjoy it. In addition to salt and pepper, you can add other spices to give it new essences and aromas.

Before showing the recipe, we recommend the chili; the smaller you chop it, the less spicy the sauce will feel; as they are not large pieces, they will mix more quickly and will not be very aggressive. And now the recipe.

Roasted Tomatillo Salsa Verde Recipe

15 fresh tomatillos, peeled and cleaned.

1 small onion, quartered

2 or 3 serrano peppers.

1 large serving of fresh cilantro, stems removed, plus 1/4 cup of fresh cilantro leaves

3 garlic cloves.

1 tablespoon of freshly squeezed lemon concentrate.

1 tablespoon of cider vinegar.

1/2 teaspoon table salt, plus extra for seasoning

What is the best way to cook with tomatillos?

1.- Preheat the grill to high heat.

2.- Line a baking sheet with aluminum foil and cover with the tomatillos and onion wedges. Transfer to the oven and now you can roast for about 10 minutes, until the tomatillos and onion are slightly blistered, turning halfway through.

3.- Meanwhile, fill a small pot with water and add the serrano’s. Please bring them to a boil over medium heat and cook for 10 to 12 minutes until the pepper turns grayish-green. Drain, remove stems, and store.

4.- Transfer the tomatillos, the onion, and the 2 serranos to a blender. Add the coriander, garlic, lemon juice, vinegar, and salt, and pulse to mix. Add salt, if needed. If desired, add serrano pepper to achieve the desired level of heat. Press again to integrate them.

5.- Pour the sauce into a hermetically sealed pot and place it in the refrigerator to chill until serving time.

Homemade Roasted Tomatillo Salsa Verde

We recommend that if you want to use the tomatillo sauce as the Mexicans do, you can use it in many preparations, such as the classic tacos al pastor or green enchiladas. It is an easy recipe with which we invite you to accompany your favorite practices. We suggest that if you can’t get fresh tomatillos or want to speed things up, use a 28-ounce can of tomatillos instead. Drain them and skip the roasting process. Although you will avoid the toasty flavors, you can add the canned tomatillos and onions directly to the blender.

This sauce is a sample of combinations of the recipes of our country Mexico; in it, you can taste sweet, acid, and spicy flavors, all at the same time. This sauce has become one of the most famous in the country.

Other variations of this recipe include adding a touch of lemon juice and chopped avocado; this grilled salsa verde has it all. If you do not want to consume it immediately, you can store it in a container in the fridge for three days. We hope you like it, and it is a recipe to go to in your kitchens.
