1 serrano chili, finely chopped
1 medium onion, finely chopped
4 ounces of chorizo without the skin.
1 large garlic clove, minced
¼ teaspoon of table salt
8 ounces chihuahua cheese, grated
1 teaspoon dried oregano, preferably Mexican
6 store-bought corn or flour tortillas, warmed (allow corn tortillas for gluten-free option)
How to Melt Queso Cheese
- Preheat the oven to 425°F. Line a 3 to 4-cup baking dish.
- While the oven is warming up, now, you can brown the chorizo in a medium skillet over medium heat, and start breaking it up into small pieces until it is half cooked about 5 minutes.
