Beef tacos are very delicious, and the most curious thing about this popular dish is that a single taco can contain everything you need for a healthy dinner.

Beef Tacos Mexican Ingredients
24 small yellow corn tortillas

Processing the Meat
1- You should place the meat in a slow cooker. Cover with water and add the onion, garlic, bay leaves, marjoram, and thyme. You should cook using a regular pot on the stove for about 2 ½ to 3 hours until the meat shreds easily.
2- Once the meat is cooked, shred and separate 6 cups of meat to make the tacos.
Preparation to make the beef tacos
1- You should heat half the vegetable oil in a large skillet. You quickly heat the tortillas on both sides. Then you cover with aluminum foil to keep the tortillas warm.
2- Add the remaining vegetable oil as needed to heat the tortillas. This step will help prevent the tortillas from breaking.
Preparation of the sauce
1- You must remove the peel from the green tomatoes and rinse. You place it in a medium saucepan and cover it with water. You should lightly toast the guajillo peppers in a skillet over medium heat.
2- You should remove the chiles de Arbol beforehand, as they roast very quickly. It would help if you placed the roasted chiles in the saucepan with the tomatoes and garlic.
3- You should cook over medium-high heat for about 15 minutes until the tomatoes are cooked and the chiles are soft.
4- Place the tomatoes, chiles, and garlic in your blender with ½ cup of cooking water. It would help if you processed until you get a wonderful sauce.
5- Pour it into a bowl and add a teaspoon of instant coffee. You must season with salt and pepper before reserving.
To assemble the plugs
You must fill each tortilla with a little shredded meat, fold it, and place it on a plate. If you use small tortillas, you can make 4 tacos per person or 3 tacos when you use standard-size tortillas. It would help if you covered the tacos with the sauce using a ladle. Then, you add cilantro and onion on top of the tacos, serving with lemon to taste.
