Carnitas Mexicanas de Cerdo Ingredients

– 2 kilos of pork of all kinds
– Oil
– Oregano powder to taste
– Ground black pepper to taste
– 2 oranges
– 2 lemons
– 1 onion
– 2 cloves of garlic
– 1 bunch of fresh coriander
– 8 corn tortillas

Elaboration

1- To start, you prepare the vegetables, wash the cilantro, and chop the leaves finely until you complete at least half a cup.
2- In the case of the onion, you peel it and cut it into cubes. Also, you peel the garlic cloves and finely chop them.
3- For the moment, you reserve all the vegetables you have already prepared.
4- Next, you should use a copper pot. Traditionally, these containers are used to distribute heat evenly. If you don’t have one, you look for a helpful equivalent to distribute the cooking heat well.
5- You heat the pot and add the butter and garlic to cook for about three minutes. *Next, chop the oranges in half, squeeze them, and add the juice to the butter.
6- You add enough water to the pot to cover the meat. Also, you add a touch of salt to taste, a touch of pepper, and a teaspoon of oregano.
7- You mix and let the meat cook, covered, over medium heat, for one hour.
8- You uncover the pot and increase the fire, so the broth evaporates.
9- With much less liquid, the tender meat begins to brown in the lard, preventing the meat from drying to dehydration. You stir to keep the butter and meat integrated for 20 minutes.
10- When serving, accompany the pork carnitas with hot tortillas, onion cubes, lemons cut into quarters or eighths, chopped cilantro, refried beans, and a good sauce.
