Pork and Beans Gorditas Ingredients:

2 cups of flour dough
2 cups of hot water, plus extra if needed
2 teaspoons of salt
2 cups all-purpose flour, plus additional if needed
2 teaspoons of baking powder
2 tablespoons of lard
2 cups vegetable oil

FOR THE FILLING

2 cups of store-bought refried beans or recycled beans, warm.
2 cups of hot pork carnitas.

TO dress
2/3 cup of Chihuahua cheese
2 medium tomatoes, sliced
1/2 cup sour cream

METHOD OF PREPARATION

  1. Using a large bowl is recommended to mix or combine the flour dough with the hot water and salt. Then you need to add the flour, baking powder, and lard. Once everything is ready, continue mixing until you have a homogeneous paste. If it’s still a little dry, don’t worry and add a little more water. The mixture is perfect when you see the dough quickly form into balls in the palm of your hand. If, on the other hand, it is moist, add a little more flour until you get the same result.
  2. Spray water on a large work surface covered with wax paper. Make 24 balls of dough on waxed paper and press into circles about 1/4 inch thick. You can use a mold to make this job more accessible.
  3. In a large skillet, pour and heat the oil over medium heat. When hot, fry the gorditas, pressing with a spatula, until cooked through and golden brown. Leave it for about 2 minutes on each side. Then drain it on a plate lined with kitchen paper towels and keep it warm.
  4. When cooked, cut off the tops and stuff them. You can make the filling with beans, pork, cheese, tomatoes, and sour cream. Or, if you wish, you can use only one class of these fillings or others of your choice. Once our gorditas are stuffed, you should serve them immediately.
