Mexican Soup with Chicken

This delicious Mexican soup with beans, chicken, corn, and nachos is one of my grandfather’s favorite Mexican dishes. The taste is exquisite; its smell is very characteristic. This recipe is straightforward to prepare because it only contains beans, chicken, corn, and nachos, as the main ingredients; we are sure you will like it.

Mexican Chicken Soup Recipe

Ingredients:

4 garlic cloves, peeled
2 branches of celery cut into pieces
3 branches of parsley
1 chicken of 2 kilos cut into pieces
8 cups of water
2 teaspoons of salt
½ medium white onion
3 large carrots cut into 3 pieces
2 coriander sprigs

For The Garnish

1 lemon, cut into sections
1 serrano or jalapeño pepper, minced
2 cilantro sprigs, chopped
1 avocado, diced
½ white onion, finely chopped

Optional cooked white rice
Hot corn tortillas

Mexican Soup with Chicken and Corn – Preparation

1- You must place the chicken, water, and salt in a large pot to cook until it boils. It will then foam on the surface before it is removed and discarded.
2- Add the onion, garlic, and celery, and partially cover the pot. It would help if you lowered the temperature by approx. 30 minutes.
3- You add the carrots and cilantro. If you want to use other vegetables, you should add them 15 minutes after adding the carrots since they take longer to cook. Then, you remove everything and put them in a separate container.
4- You cook the broth for 10 minutes until the carrots are fully cooked.
5- When the chicken pieces are not so hot, shred them or break them into small pieces. When the carrots are done, cut them into cubes and separate them.
6- Strain the broth using a fine strainer. You must return the broth to the pot where you cooked it; let it rest for 10 minutes, and remove the excess fat that formed on the surface. If you are not going to consume the broth immediately, you can put it in the refrigerator, and when it is cold, you will be able to remove the fat more efficiently.
7- You heat the broth to medium-low temperature and check if it needs more salt for your taste. Place a little rice, shredded or cubed chicken, and chicken broth when you serve.
8- Place the garnish to the side so that everyone can serve themselves to their liking.
9-The ingredients of the garnish are optional and to the taste of each diner, but if you include them all, you will have a super delicious soup.
