FOR THE DRESSING

Green Salad Recipes

2 avocados, diced, divided

½ cup fresh cilantro leaves packed loose

1 clove of garlic, minced

½ serrano pepper stemmed and cut into chunks

1 ½ tablespoon freshly squeezed lemon juice

¼ teaspoon kosher salt, plus extra for seasoning

¼ teaspoon of a freshly ground black pepper

2 tablespoons extra-virgin olive oil

For the salad

Butter a red or green leaf of lettuce, washed, and strip.

1 pint of cherry-tomatoes, cut in half

3 scallions, thinly sliced

To make the Dressing

In a blender, pulse to combine one of the avocados with the cilantro, garlic, serrano pepper, lime juice, salt, and pepper. Add the olive oil in a slow until emulsified. Taste and season with additional salt and pepper, if needed. Reserve the mixture for now.

To make the salad

In the large bowl, toss to combine the lettuce, tomatoes, and chives. Drizzle with Dressing, toss again, and serve immediately.
