For a great taste, try a Mexican-style burrito breakfast wrap wey!

I don’t know anyone who doesn’t go down a good burrito. They offer a great choice in a family of varied flavors, as we can customize the contents to suit the many different individual preferences. Would you like to include some meat in yours? Add the cooked chorizo or seasoned ground beef for tacos or leftover pork carnitas. Prefer to up the vegetarian factor? Try adding roasted vegetables that have been chopped into bite-sized pieces. I like to serve my burritos with a little hot sauce and spicy pickled vegetables. But if you are not a pure-bred Mexican, you can skip the solid spicy dishes.

THIS RECIPE IS FOR 8 PEOPLE

PREPARATION TIME: 15 MINUTES

COOKING TIME: 10 MINUTES

BURRITO BREAKFAST INGREDIENTS:

2 tablespoons extra virgin olive oil

2 small onions, finely chopped

3 jalapeño peppers, stemmed and finely chopped

12 large eggs, lightly beaten

1 teaspoon salt

½ teaspoon freshly ground black pepper

8 (10-inch) flour or wheat tortillas, warmed

2/3 cup store-bought Refried Beans or Recycled Beans, heated

2/3 cup Serrano tomato sauce or store-bought sauce, plus extra for garnish

1/2 cup sour cream

2 cups shredded sharp Cheddar cheese

2 avocados, finely diced

PREPARATION:

  1. In a medium skillet over medium heat, heat oil until shimmering. Add the onion and jalapeno peppers, and sauté, occasionally stirring, until the vegetables soften. This process should take approximately 4 minutes. Add the eggs, salt, and pepper, and cook until just scrambled.
  2. On large, shallow serving plates, spread each tortilla lengthwise with about a quarter of the beans, salsa, and sour cream. Top each tortilla with a quarter of the egg mixture and finish with the cheese and avocado.
  3. Roll up burrito style, sealing the edges before rolling. Serve immediately with extra sauce.

A COOK-TO-COOK TIP: To save time, prepare Step 1 ahead of time and refrigerate until ready to use. Then, heat the egg and vegetable mixture in the microwave and continue with the recipe.
